What do you really know about a chicken egg?
Chicken eggs are very nutritious and contain most of the recommended nutrients, with the exception of vitamin C and dietary fiber. Egg yolk contains many important nutrients including proteins, lipids, vitamins and minerals, while egg whites are mostly protein, water and have almost no fat. Egg proteins are a good source of protein as evidenced by their amino acid score of 100 and a high NPU (1).
Egg white versus milk protein and soy protein
The protein in egg white has the same number of amino acids as milk whey protein and soy protein (ie, 100); therefore these proteins are of comparable digestibility. However, egg whites have a higher NPU (or protein utilization rate) than both milk whey and soy protein. Interestingly, egg white contains the same amount of branched chain amino acids as milk whey protein, but a higher content of sulfur-containing amino acids (cysteine and methionine) (1). In fact, egg white is comparable to whey protein (2).
